THE best herbal ice lollies

It's that glorious time of year where we all turn to eating ice, if you think about that, it's such a strange concept. Anyway, I'll move on and let our minds rest. I am a firm fan of making a homemade ice lolly and I used to make them by making a smoothie but my taste has completely changed recently. I am fancying less fruity flavours and more earthy, herby tastes. I have three children and they all love these lollies. See what you think. Let me know in the comments below if you give this a try.
Ingredients:
- 3 cups of water
- 1/3 cup raw local honey
- 1 tbsp dried chamomile flowers
- 1/2 tbsp dried nettle
You can use fresh herbs here but triple the quantities of the herbs.
Method:
Add the water and herbs into a pan and bring to just under a boil and turn the heat off. Leave to steep for as long as you can. I tend to say a minimum of 2 hours. I normally make this before I go to bed and leave it overnight.
Stir in the honey whilst it's still warm, it'll help it to dissolve.
Strain the herbs away and pour into your moulds. They are going to take at least 8 hours to freeze so plan ahead.

There is so much goodness in these lollies. Chamomile is an anti-inflammatory, amongst other things, but at this time of year I am thinking of hey fever relief for my little poppets so this works really well. Nettles are high in calcium, chromium, magnesium, zinc, iron, selenium, potassium and many vitamins including A and C. Again, they are anti-inflammatory and have been known to reduce the symptoms of hay fever. Then there is the honey, raw honey is a prebiotic which is amazing for your gut health. It has healing properties being known to soothe the digestive system, good for sore throats and it's antibacterial. You get my gist here. You can enjoy a wonderful tasting lolly whilst knowing you are having something really high in nutrition.
